Baked Cajun Chicken

(makes 4 servings)
Diabetic Recipes : Baked Cajun Chicken

Ingredients:

  • 1½ to 2 lb.split chicken breasts, cut off skin and discard
  • ½ tsp. dried thyme, crushed
  • Nonstick spray coating
  • ¼ tsp. garlic salt
  • 2 Tbsp. nonfat milk
  • ⅛ tsp. ground white pepper
  • 2 Tbsp. onion powder
  • ⅛ tsp. crushed red pepper
  • ⅛ tsp. ground black pepper

Preparation:

  • Spray a 13 x 9 x 2 inch baking dish with nonstick cooking spray.
  • Arrange the chicken in the dish, meat side up. Brush lightly with milk.
  • Mix onion powder, thyme, garlic salt, white pepper, red and black pepper in small-size bowl. Sprinkle over chicken.
  • Bake in oven at 375 degrees F until the chicken is cooked through (about 45 minutes).
