Crispy Chicken

(makes 4 servings)
Diabetic Recipes : Crispy Chicken

Ingredients:

  • 1 cup cornflakes, crushed
  • ¼ tsp. thyme
  • ¼ tsp. pepper
  • 1 lb. skinless, boneless chicken breast
  • 3 tsp. margarine, melted

Preparation:

  • Preheat oven to 400 F.
  • Mix together cornflakes, thyme and pepper. Rinse chicken thoroughly and pat dry.
  • In a 13 x 9 x 2-inch baking pan, place chicken, breast side up. Brush chicken with margarine.
  • Sprinkle cornflakes on top of chicken breasts. Cover with a lid or a large sheet of foil tucked under the sides of the pan.
  • Bake about ½ hour. Carefully remove foil, then bake, uncovered, for another ½ hour.
