Ingredients:
- 1 cup cornflakes, crushed
- ¼ tsp. thyme
- ¼ tsp. pepper
- 1 lb. skinless, boneless chicken breast
- 3 tsp. margarine, melted
Preparation:
- Preheat oven to 400 F.
- Mix together cornflakes, thyme and pepper. Rinse chicken thoroughly and pat dry.
- In a 13 x 9 x 2-inch baking pan, place chicken, breast side up. Brush chicken with margarine.
- Sprinkle cornflakes on top of chicken breasts. Cover with a lid or a large sheet of foil tucked under the sides of the pan.
- Bake about ½ hour. Carefully remove foil, then bake, uncovered, for another ½ hour.
