Herbed Chicken Bites

(makes 5 servings)
Diabetic Recipes : Herbed Chicken Bites

Ingredients:

  • ¼ cup plain dried bread crumbs
  • 2 Tbsp. grated Parmesan cheese
  • 1 Tbsp. all purpose flour
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • ⅛ tsp. ground white pepper
  • 2 Tbsp. low fat 1 percent milk
  • 2½ cups (about 1¼ lb.) boneless, skinless chicken breasts, cubed

Preparation:

  • Preheat oven to 375 degrees F. Spray baking sheet with nonstick cooking spray.
  • In quart sized zippered plastic bag, add bread crumbs, cheese, flour oregano, basil and pepper; shake to mix.
  • In medium-size bowl, add milk and chicken pieces, stir to coat.
  • Place 4-5 chicken pieces in bag and shake gently until lightly coated.
  • Place on prepared baking sheet, then repeat with the remaining chicken.
  • Bake for 30 minutes or until golden brown.
