Ingredients:
- 2 whole chicken, raw , trimmed, remove and discard skin, cut into 6 pieces (about 2½ lb. each)
- 6 garlic cloves , mashed
- 1 teaspoon salt and pepper
- 1 teaspoon paprika
- 1 onions , cut in half and thinly sliced
- ½ cup orange juice
- 1 teaspoon grated orange peel
- ⅓ cup parsley, chopped
- 3 Tablespoons olive oil
Preparation:
- Rinse chicken and pat dry with paper towels. In baking pan, place chicken pieces, sprinkle with garlic, and toss to coat. Season chicken with salt, pepper, and a generous sprinkling of paprika. Top with onions. Drizzle orange juice over chicken and sprinkle on zest. Sprinkle on parsley and toss again. Drizzle with oil and again toss to coat chicken. Cover and refrigerate overnight or up to 24 hours.
- Preheat grill to medium or broiler. Grill or broil chicken, turning once, until juices of chicken run clear (about 12 minutes per side). Serve chicken hot or chill and serve cold.
